Hier heeft het DNW Lab zijn deuren geopend: een nieuwe onderzoeksruimte waar chef-koks, wetenschappers en boeren onderzoeken hoe de toekomst van voedsel eruit zou kunnen zien, en die stevig geworteld is in het plantenrijk.[\/vc_column_text][vc_column_text css_animation=&#8221;bottom-t-top&#8221; uncode_shortcode_id=&#8221;117017&#8243;]Het lab is een initiatief van chef-kok Emile van der Staak, die al jarenlang een pionier is op het snijvlak van gastronomie, ecologie en wetenschap.<br \/>\n\u201cHier mogen we fouten maken\u201d, zegt Van der Staak. \u201cHier kunnen dingen misgaan. Twee onderzoekers met een academische achtergrond leiden de projecten, maar het gaat niet alleen om data. Smaak, textuur en geur zijn net zo essentieel.
